One Pot Sweet and Savory Chicken With Carrots and Dried Fruit

Tender chicken, sweet dried fruit, soft carrots, and a lightly spiced sauce come together in one pan for a meal that feels warm and satisfying without requiring complicated prep. The combination of honey, turmeric, and dried fruit gives the dish a rich sweet savory flavor that pairs perfectly with rice or couscous.
Ingredients
- 4 chicken drumsticks or chicken breasts
- 1 cup baby carrots
- 1 small onion, chopped
- 1 cup dried fruit such as dates, raisins, or prunes
- 3 garlic cloves, minced
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tsp turmeric
- Salt, to taste
- Black pepper, to taste
- 1 cup water or chicken broth
- Olive oil
Instructions
Preheat the oven to 350°F.
Heat a drizzle of olive oil in a large oven safe skillet over medium heat.
Add the onion and garlic and sauté until soft and lightly golden.
Add the baby carrots and continue cooking for about 5 minutes.
Add the chicken and sear on all sides until lightly golden brown.
In a small bowl, whisk together the soy sauce, honey, and turmeric.
Pour the mixture over the chicken and add the dried fruit to the skillet.
Season with salt and black pepper, then pour in the water or chicken broth.
Bring the mixture to a gentle boil.
Cover the skillet and transfer it to the oven.
Bake for about 40 minutes, or until the chicken is tender and the sauce has slightly thickened.
Serving Suggestion
Serve warm over white rice or fluffy couscous to soak up all the flavorful sauce.
