Pair it with naturally sweet roasted sweet potatoes and a simple yet bold dressing, and the result is a colorful salad that feels hearty, satisfying, and surprisingly easy to prepare. The combination is truly something special.
What You'll Need
1 eggplant
2 sweet potatoes
2 tablespoons sesame seeds
3 garlic cloves, sliced
1 tablespoon natural date syrup
½ tablespoon pomegranate syrup
Olive oil, for drizzling
Himalayan salt, to taste
Optional: 1 tablespoon dried chili
How to Make It
Step One: Roast the Vegetables
Cut the eggplant into cubes.
Slice the sweet potatoes into rounds or cut them into cubes.
Line a baking sheet with parchment paper and spread the vegetables evenly across the tray.
Drizzle lightly with olive oil and sprinkle with Himalayan salt.
Bake at 350°F for about 25 minutes, or until tender.
Be careful not to overbake. The goal is soft, tender vegetables while keeping the eggplant juicy and the sweet potatoes perfectly cooked.
Step Two: Assemble the Salad
Place the garlic, date syrup, pomegranate syrup, and optional chili into a serving bowl.
Add the roasted sweet potato and eggplant.
Sprinkle with sesame seeds and toss gently.
Serve warm or at room temperature.
