Cheesy Hasselback Potatoes for Shavuot

Shavuot is the perfect time to bring comforting dairy dishes to the table, especially recipes that feel festive without requiring hours in the kitchen. These crispy roasted potatoes are buttery on the outside, soft on the inside, and topped with melted cheese and fresh herbs for a simple but delicious holiday side dish. They pair beautifully with salads, fish, quiche, or any Shavuot dairy spread.

What You’ll Need

  • 2 large potatoes
  • 2 tablespoons melted butter
  • Olive oil cooking spray
  • Chopped fresh herbs of your choice
  • 1 tablespoon crumbled feta cheese
  • 2 tablespoons grated cheddar cheese or another hard cheese
  • Salt and black pepper, to taste

How to Make It

Preheat the oven to 350°F.

Using a sharp knife, cut thin crosswise slits into each potato, being careful not to slice all the way through.

Gently fan open the slits slightly, spray the inside of the potatoes with cooking spray, and place them on a baking sheet.

Melt the butter and pour it evenly over the potatoes.

Mix the herbs with salt and pepper, then sprinkle over the potatoes.

Bake for about 10 minutes.

Remove the potatoes from the oven, sprinkle both cheeses over the top, and return to the oven for another 10 minutes, or until the cheese is melted and lightly golden.

Serve hot.
