No Bake Chocolate Date Balls: A Healthy Sweet Treat

When the weather gets warmer, most of us start craving lighter treats that still satisfy a sweet tooth without feeling too heavy. These chocolate date energy balls are naturally sweet, rich, quick to make, and perfect straight from the refrigerator on hot afternoons. They also make an easy snack to keep on hand throughout the week.
What You’ll Need
1.4 oz coconut oil
20 large Medjool dates
4 level tablespoons cocoa powder
2/3 cup ground almonds
1/3 teaspoon cinnamon
For the Coating
- Cocoa powder
- Cacao nibs
- Shredded coconut
- Toasted coconut
- Sesame seeds
You can choose just one coating or make a variety and coat each ball differently.
How to Make Them
Remove the pits from the dates and check carefully for insects. Place the dates in a bowl and cover with boiling water. Let them sit for about 5 minutes, until softened. Drain well and allow them to cool slightly.
Place the softened dates into a food processor together with the coconut oil, cocoa powder, ground almonds, and cinnamon. Process until the mixture becomes smooth and uniform.
Transfer the mixture to the refrigerator for about 1 1/2 hours, until firm enough to shape easily.
With slightly wet hands, roll the mixture into small balls. Coat each ball in your topping of choice.
Store the finished energy balls in an airtight container in the refrigerator.
