Carrot and Basil Spread
Ingredients
- 6 cooked carrots
- 3 garlic cloves
- 1 teaspoon dried chili flakes
- Juice of 1 lemon
- A handful of fresh basil leaves
- 1/4 teaspoon Himalayan salt
- 1 tablespoon sesame oil or olive oil
- 1 teaspoon cumin
Instructions
Rinse the carrots and cut them into thick slices. Place them in a pot, cover with water, and cook uncovered for about 10 minutes, or until tender.
Transfer the cooked carrots to a blender along with 4 tablespoons of the cooking liquid and allow them to cool for about 15 minutes.
Add the basil, garlic, chili, cumin, lemon juice, salt, and oil. Blend until smooth and creamy.
