We all know that moment when a neighbor sits down with you for a cup of coffee and serves a cake that has you asking for the recipe after the very first bite.
Sometimes it's the simplest cake imaginable, like a chocolate chip cake. This cake is exactly that kind of recipe.
It contains just one and a half cups of flour (using a standard disposable hot drink cup) and a handful of basic pantry ingredients. Yet its soft, tender texture and the irresistible aroma that fills the house and draws everyone into the kitchen make it absolutely worth making.
Ingredients
2 eggs
1/2 cup sugar
1/2 cup oil
1 cup milk
1 1/2 cups flour
1 packet baking powder
1 teaspoon vanilla extract
1/2 cup chocolate chips or chopped nuts, according to preference
1 loaf pan (English cake pan)
Instructions
Preheat the oven to 180°C (350°F).
In a mixing bowl, whisk the eggs and sugar together until well combined.
Add the oil, milk, and vanilla extract, and mix until smooth.
Add the flour, baking powder, and chocolate chips (or nuts), and stir until the batter is fully combined.
Pour the batter into a greased loaf pan.
Bake for approximately 35 minutes, or until a toothpick inserted into the center comes out clean.
The Secret Finishing Touch
To make this cake truly unforgettable, dust the top with a little powdered sugar as soon as it comes out of the oven.
The warmth of the cake combined with the delicate sweetness of the powdered sugar creates a simple finishing touch that takes this humble coffee cake to the next level.
