Healthy Oat, Nut, and Tahini Cookies
Ingredients
- 2 1/2 cups rolled oats
- 1 teaspoon aluminum free baking powder
- 1 cup sesame seeds
- 1 cup coarsely chopped almonds
- 1/2 cup chopped pecans
- 1 cup chopped walnuts
- 1/2 cup coconut sugar
- 1/2 cup silan (date syrup)
- 3 eggs
- 3/4 cup raw tahini
- 1 cup shredded coconut
- 1/2 cup flax seeds
Directions
Preheat the oven to 350°F and line two baking sheets with parchment paper.
In a large bowl, combine all of the ingredients and mix well until evenly incorporated.
Lightly dampen your hands and shape the mixture into small balls. Flatten each ball gently between your palms to form cookies.
Arrange the cookies on the prepared baking sheets, leaving about 1/2 inch of space between them.
Bake for about 15 minutes, or until the cookies are golden and lightly browned around the edges.
Be careful not to overbake them.
Remove from the oven and allow the cookies to cool completely before transferring them to an airtight container.
