This simple, comforting pumpkin soup is smooth, flavorful, and perfect for chilly days. Made with just a handful of ingredients, it's naturally nourishing and easy to prepare.
Ingredients
1 medium pumpkin, cut into cubes
1 large onion, roughly chopped
2 cloves garlic, crushed
1 liter vegetable broth or water
Salt and black pepper, to taste
A pinch of turmeric for color and flavor
A little olive oil for sautéing
Instructions
In a large pot, heat the olive oil and sauté the onion until softened.
Add the garlic and cook for another few minutes.
Add the pumpkin cubes and sauté for several more minutes.
Pour in the vegetable broth or water.
Season with salt, black pepper, and turmeric.
Bring the soup to a boil, then reduce the heat and simmer for about 30 minutes, or until the pumpkin is tender.
Blend the soup using an immersion blender until smooth and creamy.
