What You'll Need
1 kg pumpkin, peeled and seeded
½ cup coconut milk
2 tablespoons oil
1 heaping teaspoon minced ginger
½ teaspoon turmeric
Salt, to taste
White pepper, to taste
How to Make It
Use a heavy-bottomed pot for best results.
Cut the pumpkin into cubes and place it in the pot together with the minced ginger.
Add a small amount of water, only enough to cover the pumpkin and no more.
Add the turmeric, salt, and white pepper.
Bring everything to a boil, then lower the heat and simmer for about 30 minutes, or until the pumpkin becomes soft and tender.
Add the coconut milk to the pot.
Using an immersion blender, blend the soup until completely smooth and creamy. If you prefer, carefully transfer the soup to a regular blender and blend until silky.
Serve warm and enjoy.
