There is something especially comforting about a homemade fruit cake on Shabbat. Ingredients

  • 4 1/4 tablespoons maple syrup, divided

  • 2 1/2 plums

  • 2 eggs

  • 2 tablespoons orange juice

  • 1 teaspoon lemon zest

  • 1 teaspoon baking powder

  • 1 Golden Delicious apple

  • 3/4 cup flour

  • 1/2 cup sugar

  • 1/3 cup canola oil

  • 1/3 cup ground almonds

  • A pinch of cinnamon

How to Make It

  1. Preheat the oven to 340°F (170°C).

  2. In a large bowl, beat the eggs and sugar until well combined.

  3. Continue mixing while gradually adding the oil, cinnamon, lemon zest, and orange juice.

  4. In a separate bowl, combine the flour, ground almonds, and baking powder.

  5. Add the dry ingredients to the wet ingredients and stir until a smooth batter forms.

Assemble the Cake

  1. Pour 2 tablespoons of maple syrup into the bottom of a round 8 to 9 inch baking pan.

  2. Thinly slice the apple and arrange the slices evenly across the bottom of the pan.

  3. Pour the cake batter over the apples and smooth the top.

  4. Slice the plums and arrange them over the batter.

Bake and Finish

  1. Bake for 40 to 50 minutes, or until a toothpick inserted into the center comes out clean.

  2. Remove the cake from the oven and immediately brush the top with the remaining maple syrup.

  3. Allow the cake to cool slightly before serving.
