Ingredients

  • 1 packet vanilla sugar

  • 1 bar white chocolate

  • ¼ cup milk or water

  • 4 eggs, separated

  • 4 tablespoons oil

  • ½ cup gluten free cake flour

  • ½ cup sugar

  • ½ packet baking powder

  • ½ cup cornstarch

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Separate the eggs. In a mixing bowl, combine the egg yolks with the vanilla sugar, oil, and milk (or water).

  3. Melt the white chocolate and add it to the yolk mixture. Stir until well combined.

  4. In a separate bowl, beat the egg whites until foamy. Gradually add the sugar while continuing to beat until stiff peaks form.

  5. Sift the gluten free flour and cornstarch together. Add them to the yolk mixture and mix well. Gently fold in the whipped egg whites until the batter is smooth and airy.

  6. Pour the batter evenly into two loaf pans.

  7. Bake for approximately 30 minutes, or until the center of the cakes is set and a toothpick inserted into the center comes out clean.

  8. Allow the cakes to cool before serving.

This light and fluffy white chocolate cake is naturally gluten free and perfect for serving with coffee, tea, or as a festive dessert.
