Sweet Potato Latkes You’ll Want to Eat Straight Off the Pan — Plus a Bonus Dip

What You’ll Need

2 sweet potatoes

1 potato

1 onion

1 egg

3/4 cup breadcrumbs

Salt, black pepper

A little chopped parsley

30 g butter (can be replaced with 2–3 tablespoons of oil)

 

How to Make Them

Peel the potato and the sweet potatoes. Cook in boiling water until softened. Mash with the butter into a puree.

Chop the onion and fry in a little oil. Mix the puree with the onion and the rest of the ingredients.

Line a baking pan with parchment paper and lightly grease it. With damp hands, form latkes from the mixture and place them on the pan. Bake over medium heat for about half an hour. Turn the latkes over and bake for about another 15 minutes, until fully golden.

What You’ll Need

1 sour cream

2 tablespoons mayonnaise

1 teaspoon crushed garlic

Salt, pepper

A little chopped chives.

 

How to Make It

Simply mix everything together and serve with the latkes.
