Red Lentil and Tomato Soup Recipe: A Flavorful, Healthy, and Comforting One-Pot Meal

Ingredients
3–4 tomatoes
3–4 whole cloves
3–4 cups water
2½ cups red lentils
3 tablespoons oil
¾ teaspoon cumin seeds
¾ teaspoon mustard seeds
1½ tablespoons chopped fresh ginger
1½ teaspoons salt
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon curry powder or turmeric
1 cinnamon stick
½ cup chopped fresh cilantro
Instructions
Soak the lentils in warm water for about one hour, then rinse and sort through them carefully.
Heat the oil in a large pot and add the mustard seeds. Fry until they begin to pop.
Add the cumin seeds, cloves, and cinnamon stick, and stir for a few seconds.
Immediately add the chopped ginger and sauté for about 30 seconds, stirring constantly.
Add the remaining spices, except for the salt.
Dice the tomatoes and add them to the pot. Stir, cover, and cook for about 5 minutes, or until the tomatoes have softened. Add a little water if needed.
Drain and rinse the lentils, then add them to the pot along with the water.
Bring to a boil without covering the pot.
Reduce the heat and simmer for about 25 minutes.
Turn off the heat and cover the pot.
To serve, transfer to a serving bowl and sprinkle the chopped cilantro on top.
