Crispy Cauliflower and Potato Fritters: A Golden, Cheesy Family Favorite
These easy cauliflower and potato fritters are crispy on the outside, fluffy on the inside, and packed with Parmesan flavor

Ingredients
2 potatoes
1 small to medium cauliflower
2 eggs
50 g (1.75 oz) Parmesan cheese, grated
Salt and black pepper, to taste
A pinch of nutmeg
Instructions
Prepare the Potatoes
Boil the potatoes until tender.
Remove them from the water, allow them to cool slightly, and peel them.
Mash the potatoes until smooth.
Cook the Cauliflower
Cut the cauliflower into florets.
Boil in a separate pot for about 10 minutes, or until tender.
Drain well.
Prepare the Egg Whites
Separate the eggs.
Beat the egg whites until they form soft but stable peaks.
Make the Fritter Mixture
In a large bowl, combine the mashed potatoes, cooked cauliflower, grated Parmesan, egg yolks, salt, black pepper, and nutmeg.
Mix until well combined.
Fold in the Egg Whites
Gently fold the whipped egg whites into the potato and cauliflower mixture, being careful not to deflate them.
Shape and Fry
In a small bowl, lightly beat an additional egg white.
Heat a small amount of oil in a frying pan over medium heat.
Using a spoon, shape the mixture into fritters.
Dip each fritter into the beaten egg white.
Carefully place them in the hot pan.
Cook Until Golden
Fry on both sides until the fritters are firm and beautifully golden brown.
