Grilled Eggplant With Fig and Red Wine Sauce
Ingredients
5 to 6 ripe figs
4 to 5 eggplant slices, about 1/2 inch thick
3 to 4 shallots
1 cup red wine
1 garlic clove
1 teaspoon silan
1/4 cup olive oil
1/4 teaspoon cinnamon
A few fresh thyme leaves
Salt, to taste
Directions
In a small bowl, combine the olive oil and thyme leaves. Crush the garlic clove and add it to the mixture. Stir well.
Brush the eggplant slices generously on both sides with the seasoned olive oil.
Heat a grill pan over high heat. Add the eggplant slices and grill for 5 to 7 minutes per side, until tender and lightly charred. Be careful not to overcook them, as they should still hold their shape.
Prepare the Fig Sauce
Heat a small amount of olive oil in a saucepan. Add the whole shallots and sauté until lightly browned on all sides.
Meanwhile, place the figs in a food processor and blend until smooth.
Transfer the fig puree to a saucepan and add the red wine, cinnamon, and silan. Bring to a gentle simmer and cook for several minutes, stirring occasionally, until the sauce thickens slightly and the flavors meld together.
Assemble the Dish
Place an eggplant slice on each serving plate.
Top with a caramelized shallot and generously spoon the fig and red wine sauce over the eggplant.
Serve warm and enjoy.
