Easy Cheesy Baked Eggplant
Ingredients
2–3 medium eggplants
Salt and black pepper, to taste
100 grams (3.5 ounces) mozzarella cheese, grated
50 grams (1.75 ounces) Bulgarian cheese or feta cheese, crumbled
How to Make It
Preheat the oven to 350°F (180°C).
Wash the eggplants well and slice them into medium-thick rounds. Arrange the slices in a single layer in a baking dish.
Season lightly with salt and black pepper.
Sprinkle the grated mozzarella evenly over the eggplant slices, then scatter the crumbled Bulgarian or feta cheese on top.
Bake for about 45 minutes, or until the eggplant is soft and tender and the cheese is melted and lightly golden.
Serve hot and enjoy.
