Maple-Glazed Salmon with Garlic Green Beans

Ingredients

  • 4 salmon fillets

  • ½ cup maple syrup

  • 2 garlic cloves

  • 250 g (½ lb) green beans

  • ¼ cup orange juice or apple juice

  • Salt and black pepper, to taste

  • Olive oil

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a small saucepan, combine the orange juice (or apple juice), maple syrup, and garlic. Bring to a boil and simmer for about 10 minutes.

  3. Place the salmon fillets on a baking tray and pour the maple glaze over them.

  4. Bake for about 10 minutes, or until the salmon is lightly browned and cooked through.

  5. Remove the salmon from the oven and set aside while preparing the green beans.

  6. Heat a little olive oil in a wok or skillet. Add the green beans, one minced garlic clove, salt, and black pepper. Sauté until the beans are tender-crisp.

  7. To serve, arrange the green beans on a serving platter, place the salmon fillets on top, and garnish with a sprig of parsley or cilantro.
