Cheesy Sweet Potato and Bean Tortillas
These baked tortillas are filled with creamy sweet potatoes, hearty beans, garlic, spices, and melted mozzarella for a flavorful, satisfying meal

1 tablespoon vegetable oil 1 onion, finely chopped 4 tablespoons mayonnaise 4 cloves garlic, crushed 6 cups canned beans, drained and rinsed 2 cups water 3 tablespoons chili powder 2 teaspoons ground cumin 4 teaspoons mustard 3 tablespoons soy sauce 4 cups cooked and mashed sweet potatoes 12 store bought flour tortillas 2 cups shredded mozzarella cheeseIngredients
Instructions
Preheat the oven to 180°C (350°F).
Heat the vegetable oil in a large skillet over medium heat. Sauté the onion and garlic until softened and lightly golden.
Add the beans and the mashed sweet potatoes. Gradually pour in the water while stirring until the mixture is well combined.
Remove the skillet from the heat. Stir in the chili powder, ground cumin, mustard, soy sauce, mayonnaise, and paprika until evenly mixed.
Divide the filling evenly among the tortillas. Fold each tortilla and arrange them in a baking dish or on a lined baking tray.
Sprinkle the shredded mozzarella evenly over the tortillas.
Bake for about 12 minutes, or until the cheese is melted and lightly golden.
