One Pan Baked Tilapia With Roasted Vegetables

Ingredients

For the fish

  • 4 tilapia fillets
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • Juice of ½ lemon
  • 1 teaspoon sweet paprika
  • ½ teaspoon turmeric
  • ½ teaspoon black pepper
  • 1 teaspoon salt

For the vegetables

  • 4 medium Yukon Gold or russet potatoes, cut into bite sized cubes
  • 2 carrots, sliced into rounds
  • 1 zucchini, cut into thick slices
  • 1 red onion, cut into wedges
  • 1 red bell pepper, sliced
  • 10 cherry tomatoes
  • 3 tablespoons olive oil
  • 1 teaspoon sweet paprika
  • ½ teaspoon garlic powder or 1 minced garlic clove
  • Salt and black pepper, to taste

Directions

Preheat the oven to 400°F and line a large baking sheet or roasting pan with parchment paper.

In a large bowl, toss the potatoes, carrots, zucchini, onion, bell pepper, and cherry tomatoes with the olive oil, paprika, garlic, salt, and pepper until evenly coated. Spread the vegetables into a single layer on the prepared baking sheet.

Roast for about 25 minutes, or until the vegetables begin to soften and lightly brown around the edges.

While the vegetables are roasting, whisk together the olive oil, garlic, lemon juice, paprika, turmeric, salt, and pepper. Brush the mixture over both sides of the tilapia fillets.

Remove the baking sheet from the oven and gently move the vegetables aside to make room for the fish. Place the fillets among the vegetables and return the pan to the oven.

Bake for another 12 to 15 minutes, or until the fish is opaque and flakes easily with a fork. Avoid overcooking, as tilapia cooks quickly and stays juiciest when removed as soon as it's done.

Before serving, squeeze fresh lemon juice over the fish and vegetables and sprinkle with chopped fresh parsley, if desired.
