Easy Marble Passover Cake
This easy Passover cake combines rich cocoa and fresh orange flavor for a soft, tender dessert everyone will love

2/3 cup finely ground matzah meal
1/4 cup potato starch
1 teaspoon baking powder
2 eggs
1/2 cup oil
1/2 cup orange juice
2/3 cup sugar
1 tablespoon cocoa powder (or chocolate drink powder)
3 tablespoons shredded coconut (optional – can be omitted if you don’t like coconut)
Instructions
In one bowl, mix together the matzah meal, potato starch, baking powder, and coconut.
In a separate bowl, beat the eggs (whole) with the sugar for a few minutes until well combined.
Add the oil and orange juice, and mix well.
Add the dry ingredients to the wet mixture and stir until the batter is smooth and uniform.
Grease a 20 cm round pan or a loaf (English cake) pan.
Pour half of the batter into the pan.
Add the cocoa powder to the remaining batter and mix well.
Pour the chocolate batter on top, then gently swirl with a toothpick or skewer to create a marbled effect.
Bake in a medium oven for about 30–35 minutes, until done.
