This fresh and vibrant salad combines crisp apples, leafy greens, toasted walnuts, and sweet cranberries, all tossed with a delicious honey-orange dressing. It's the perfect balance of sweet, tangy, and crunchy flavors, making it an excellent side dish for holidays, Shabbat meals, or everyday dining.

Ingredients

For the Salad

  • 6 lettuce leaves

  • 1 Pink Lady apple

  • ½ bag baby greens

  • ½ bunch fresh parsley

  • Toasted walnuts

  • Dried cranberries

For the Dressing

  • 3 tablespoons honey

  • 3 tablespoons fresh orange juice

  • 2 tablespoons balsamic vinegar

  • 1 clove garlic, minced

  • 1 tablespoon oil

  • 1 teaspoon whole-grain Dijon mustard

  • Coarse salt, to taste

Instructions

Prepare the Dressing

  1. In a small bowl or jar, whisk together the honey, orange juice, balsamic vinegar, garlic, oil, Dijon mustard, and coarse salt.

  2. Set aside until ready to serve.

Prepare the Salad

  1. Wash the baby greens and lettuce thoroughly.

  2. Tear the lettuce leaves into large bite-sized pieces.

  3. Finely chop the parsley.

  4. Slice the apple into thin slices.

  5. In a large serving bowl, combine the greens, lettuce, parsley, apple slices, a handful of dried cranberries, and a handful of chopped toasted walnuts.

Pour the dressing over the salad just before serving and toss gently to coat.
