Crispy Pea and Cilantro Fritters

Ingredients

  • 400 grams (14 ounces) frozen peas, thawed
  • 1 bunch fresh cilantro
  • 3 eggs
  • 1/2 cup breadcrumbs
  • 1 teaspoon turmeric
  • Salt and black pepper, to taste
  • Oil, for frying

How to Make Them

Allow the peas to thaw completely and drain away any excess liquid.

Place the peas and cilantro in a food processor and pulse until combined. The mixture should remain slightly coarse rather than completely smooth.

Transfer the mixture to a bowl and add the eggs, breadcrumbs, turmeric, salt, and black pepper. Mix well until fully combined.

Let the mixture rest for about 15 minutes. This helps it firm up and makes the fritters easier to shape.

Heat a thin layer of oil in a large skillet over medium heat.

Using two spoons, shape the mixture into small fritters and carefully place them into the hot oil.

Fry for about 2 minutes per side, or until golden brown and crisp.

Transfer the fritters to a paper towel-lined plate or a wire rack to drain any excess oil.

Serving Suggestions
