Easy Baked Zucchini Kugel
This simple baked kugel is soft, savory, and satisfying, and perfect as a holiday side dish

Ingredients
5 zucchini, peeled and cut into cubes
4 tablespoons matzah meal
4 tablespoons mayonnaise
4 eggs
4 cups lukewarm water
Salt and black pepper, to taste
1 tablespoon oil
Instructions
Place the zucchini in a pot with the water and a little salt. Cook until the zucchini is tender.
Remove the zucchini from the pot, drain well, and set aside.
In a large bowl, whisk together the eggs, mayonnaise, and matzah meal.
Add the cooked zucchini cubes and mix until evenly combined.
Grease a square baking dish and pour the mixture into the pan.
Bake for about 30 minutes, or until the center of the kugel is set and lightly golden.
Serve warm.
