Easy Baked Zucchini Kugel

This simple baked kugel is soft, savory, and satisfying, and perfect as a holiday side dish

Ingredients

  • 5 zucchini, peeled and cut into cubes

  • 4 tablespoons matzah meal

  • 4 tablespoons mayonnaise

  • 4 eggs

  • 4 cups lukewarm water

  • Salt and black pepper, to taste

  • 1 tablespoon oil

Instructions

  1. Place the zucchini in a pot with the water and a little salt. Cook until the zucchini is tender.

  2. Remove the zucchini from the pot, drain well, and set aside.

  3. In a large bowl, whisk together the eggs, mayonnaise, and matzah meal.

  4. Add the cooked zucchini cubes and mix until evenly combined.

  5. Grease a square baking dish and pour the mixture into the pan.

  6. Bake for about 30 minutes, or until the center of the kugel is set and lightly golden.

  7. Serve warm.
